I love to create new recipes! Like most people, Pinterest gives my create side a chance to play and create fun and unique dishes! Pinterest is a great place to get ideas that you can make your own. Recently, I found a recipe for a smoked sausage and cannellini bean sauté. I purchased the ingredients that recipe listed, but then my creative juices started to flow and I turned a already delicious recipe into a even more delicious soup!!
Creating my own recipes for other people to replicate is very difficult for me! I tend to cook with the a pinch of this and a dab of that method until I get the taste perfect! This time I took the time to break down the recipe! It’s perfect for lunch, dinner or freezing!
1 package Smoked Turkey Sausage
1/2 cup sweet onion
2 cans cannellini beans (rinsed and drained)
2 cans diced tomatoes
6 ounces fresh baby spinach
32 ounces chicken/vegetable broth
1 tablespoon Worcestershire sauce
1/3 fresh parsley
1 teaspoon red pepper flakes
2 teaspoons cumin
Asiago Parmesan Cheese (optional garnish)
Salt and Pepper
Start by sautéing the smoked sausage and onion in a large pot on medium heat. Add Worcestershire sauce, salt, pepper, and roasted red pepper flakes.
Just as the onions start to caramelize add in your spinach and cannellini beans.
Add in your chicken/vegetable broth and diced tomatoes, cumin, more salt and pepper, and parsley. Turn down to low and allow to simmer until everything is heated through and the flavors have combined.
If you’re feeling fancy serve with shaved Asiago Parmesan cheese on top!!
