Parmesan Fried Chicken


  • 2 boneless skinless chicken breast
  • 1 1/2 cup ground Parmesan Wisps
  • 1/3 cup ground flax seed
  • 3 eggs
  • Trader Joe’s 21 Seasoning Salute
  • Salt and Pepper

Fried chicken is a southern staple, but not exactly low carb friendly. One of the things I am enjoying about my new low carb lifestyle, it allows my creative side to take over and create fun dishes to keep my low carb lifestyle from going stale.

Recently, while shopping at Costco I came across these Crispy Parmesan Wisps. They make a perfect snack when you need a crunch and celery just isn’t cutting it. Even better, there’s only 1 carb in 23 wisps! As I was getting to the bottom of the bag as is the case with most chips or crunchy snacks, most of the wisps  left had crumbled.  An idea was born! How perfect they would be as breading for chicken!

I used my rolling pin to grind the rest of the wisps as fine as I could. In hindsight using a food processor or even a herb grinder would give you a finer consistency. But the rolling pin method worked just fine! I added ground flax seed to my cheese mixture to add extra fiber and texture.

Since the chicken breast I purchased was very thick I chose to slice them long ways to make them thinner and easier to cook. This would also help prevent over drying. On a large cutting board I placed the chicken breast between to pieces of parchment paper. I pounded out the chicken breast until they were a similar thickness. This will make the cooking process more consistent.

In a square bowl I whisked 3 eggs, salt, and pepper to create the glue that will make the Parmesan Wisp/Flaxseed stick to the chicken breast. I also added and one of my favorite seasonings: Trader Joe’s 21 Seasoning Salute. This has easily become one of my favorite seasonings to cook with. This seasoning adds so much flavor to any dish without excess carbs.  One day I’ll write a blog post about my favorite seasonings I have to always have on hand.

I found the easiest way to make this next process more efficient is to create an assembly line. Line up your egg mixture and Parmesan wisp/Flaxseed mixture. Heat a saucepan on medium to high heat. Once your oils starts to dance you are ready to go! Dip the chicken in the egg mixture then into the Parmesan Wisp/Flaxseed mixture. Transfer chicken into the saucepan. ***This is the most important part*** Do nottouch it!! Let it cook for 3-4 minutes then flip to the other side and repeat. Flipping the chicken too soon will cause the breading to break apart.

I chose to serve my chicken with caramelized onions and baked sweet potato fries!! This recipe was fun to create and even more fun to eat!! If you decide to try this recipe, post a picture to Instagram and tag Theresalwayslipstick910
