When living a low carb lifestyle eggs are a staple. They pack tons of protein with little to no carbohydrates. They make a great snack and can be easily made into any meal. This Sausage and Egg Bake packs a ton of flavor, protein and fiber. It is filling and will keep you full for hours. The recipes using eggs are endless. I hope you enjoy my recipe!
- 10 Eggs
- 1 pound ground breakfast sausage
- Green Bell Pepper, Chopped
- 8 ounces Cream Cheese
- 2 Artichoke Hearts, Drained and Chopped
- 2 hand fulls Fresh Spinach
- Salt and Pepper
- 1/4 teaspoon Red Pepper Flakes
Prep Time: 10 Minutes • Cook Time: 25 Minutes • Serves: 8
In a medium saucepan saute the ground breakfast sausage until cooked through. Drain sausage on a paper towel while the other ingredients are being prepped.
In a medium size bowl crack the eggs and add salt, pepper, and red pepper flakes. Whisk until blended.
In the a greased baking dish, layer the spinach to the create a crust. Add in sausage, green bell pepper, artichoke hearts. Pour in the eggs and add dollops of cream cheese over the top of the bake. Place in a 350 degree over for 25 minutes or until middle is cooked through.
This recipe is easy and delicious. It is perfect to prep for those mornings that you are flying out the door. Easily pop it in the microwave for 30-45 seconds and you have a super easy breakfast!
