This week I am stepping wayyyy out of my comfort zone and experimenting with a recipe that is a brand new concept!
I have never eaten a lot of Indian cuisine. I have always been intrigued, but where I live we don’t have a lot of options.
Butter Chicken is a popular Indian dish, but one of the main ingredients is tomato sauce. Tomatoes are very high in sugar and carbs so they are not exactly “Keto Friendly.” Recently I was sent a sampler from Seasonality Spices. Seasonality Spices is an Etsy shop that take their spices very seriously. All of their spices are 100% vegan, organic, all natural and fair trade. In my monthly sampler I received Keralan Masala. It is an Indian curry blend. Since I have never made Indian food I took to the internet to find a recipe that I could use my new spice blend and keep it low carb. I came across Butter Chicken and felt confident enough to pull off the recipe and it was super easy to make low carb.
- 1 Pound Boneless Skinless Chicken Breast, cut into chunks
- 1/2 Sweet Onion, Chopped
- 2 Tablespoons Butter
- 1 1/2 Tablespoon Tomato Paste
- 1 Tablespoon Minced Garlic
- 1 Cup Half and Half
- 1 Ounce Packet Keralan Marsala from Seasonality Spices
- Salt and Pepper
Prep Time: 15 Minutes ◊ Cook Time: 15 Minutes ◊ Serves: 4
Start by cutting the chicken breast into bite size pieces. You can also make this with chicken thighs or pork, but chicken breast is what I had on hand. Cover the chicken breast with the Keralan Masala and toss to ensure the chicken has a heavy coating of the spice blend.
In a large skillet on medium heat add the butter. Once the butter starts to melt add in the onion and minced garlic. Cook for 2-3 minutes until the onions become translucent and soft. Turn up the heat to medium-high heat and add in the chicken breast. Cook chicken breast for 3-5 minutes until almost cooked through.
Once the chicken is almost thoroughly cooked add in half and half and tomato paste. Use your spatula to mix the half and half and tomato paste until it becomes a gorgeous orange color. Turn the heat to low and cover for 5-8 minutes. Remove lid and stir to combine all the flavors. Your chicken should be fully cooked and your sauce should be thick and rich. Serve over cauliflower rice and enjoy!!
